Sweet & Spicy BBQ Pulled Pork and Blackened Cole Slaw Sandwiches

Pulled Pork is Always a Fan Favorite!  Try Our Spin On It!  Delicious!!

Ingredients:

  • 1 – 6.5 oz. King Kooker® Smoked Hickory Rub – Will use 3 TBSP.
  • 1 – 7 oz. King Kooker® Cajun Seasoning or Larger – Will use 2 TBSP.
  • 1- 4 lb. Boston Butt Bone In Boston Butt Pork Roast – (Bone in Adds More Flavor)
  • 1/4 Cup of Brown Sugar
  • 1 Cup of Orange Juice
  • 1 Cup of Honey
  • 4 Tablespoons of Fennel
  • 1 Cup of Red Wine Vinegar
  • Large Cast Iron Roaster or Dutch Oven
  • Smoker or Oven – Preheated to 300°F

  • Use our King Kooker® Blackened Cole Slaw Recipe For Coleslaw Pairing

Directions:

  • Mix King Kooker® Hickory Rub, King Kooker® Cajun Seasoning, and Brown Sugar in a mixing bowl until mixture looks evenly mixed.  This will be your Dry Rub.
  • Place Pork Roast into Cast Iron Roaster or Dutch Oven
  • Put on a Pair of Cooking Prep Gloves and rub the Dry Rub into the raw pork roast.  Make sure Dry Rub is coated evenly on the roast.
  • Pour Orange Juice and Vinegar into a separate mixing bowl to make your Liquid Mixture.
  • Mix the Honey and Fennel Together in a smaller bowl then add it to the Liquid Mixture Bowl and mix evenly.
  • Pour your Mixed Liquid Mixture over the pork roast.  You should have pieces of fennel gathered on top of the roast.
  • Put Cast Iron Roaster or Dutch Oven into Preheated Smoker or Oven and cook for 3 – 3.5 Hrs. at 300°F .
  • Use a Meat Thermometer to check for doneness or cut into the roast to ensure that the meat is white and all juices are clear.
  • Once cooked put roast onto cutting board to shred.
