- 1 Small Bag of Lemons – Halved – If using a 70 Qt. Pot or larger, we usually use 2 bags.
- Vegetables as desired: We like to add a pound or two of fresh whole garlic heads, a bunch of celery (chopped into sticks), and several onions (peeled and quartered).
- Access to Water – Enough to half fill the pot
- King Kooker® Jet Cooker (Model C90PKBN, C90H/SPKN, 1316N, SS1316N, 4545KDN, and 9090KDN)
- Full 20 Lb. Tank of Propane
- 1- 40 Lb. bag of ice for a 32 – 40 Qt. Pot, 2-3 – 40 Lb. bags of ice for larger pots
Directions:
- Fill pot 1/2 full of water. Add King Kooker ® Complete Crab, Shrimp, Crawfish Boil, as per above ingredients/pot size.
- Place the vegetables (garlic, onions, celery) into the basket and lower into the pot of seasoned water.
- Light the jet cooker and turn the regulator up to high output position.
- Bring water to rolling boil.
- Slightly lower regulator output so water is at a safe, gentle boil height.
- Boil until garlic is soft. This may take 15 minutes.
- Turn of the cooker. Remove the basket from the water and drain it above the pot. A King Kooker® Draining Rack (#00064 or #00068) is the perfect tool for draining your basket over the pot.
- Add the shrimp to the basket on top of the veggies and carefully lower the basket back into the hot water.
- Relight the cooker. Turn the regulator output back to high output position.
- Monitor the shrimp. When the shrimp start to blister or when the shells start separating from the meat, the shrimp are done. This usually is around the time when the water begins to boil again.
- Turn off the cooker.
- Add the King Kooker® Liquid Crab Boil, as per the quantity of shrimp and pot size above.
- Squeeze the halved lemons into the boil and drop the squeezed lemon peels into the boil as well for additional great citrus flavor.
- Put ice into boil to stop the cooking. Add enough ice so that water cools. It is especially important to stop the shrimp from cooking by cooling them down with the ice, so the shells will not adhere to the meat and the shrimp will be easier to peel.
- Let the shrimp soak for 20 minutes. While soaking gently press shrimp down with a King Kooker® Paddle or Skimmer to help shrimp draw in the special flavors of the King Kooker® seasonings.
- Taste test a shrimp for the desired meat texture and doneness after 20 minutes of soaking.
- If you would like more spice, you may add an additional 1/2 bottle to a bottle of King Kooker® Liquid Crab Boil for additional flavor. Soak for an additional 5 minutes.
- Lift the basket and allow to drain over the pot.
